ALEAFERM PDM is a yeast that is particularly suitable for in-bottle frothing, according to the Metodo Classico. Its high alcohol tolerance also makes it suitable for the production of wines with high alcohol content. A poor foam producer, it possesses limited flocculation capacity.

ALEAFERM PDM is a yeast suitable for the production of quality sparkling wines in which fermentation safety, good structure and adequate and persistent perlage are sought.
