Aleafin PERLAGE

Appearance: faint beige microgranular powder.
ALEAFIN PERLAGE is an aging aid developed to improve the organoleptic characteristics of treated wines, especially by acting on the fineness and persistence of the bubbles constituting the froth of sparkling and semi-sparkling wines.
ALEAFIN PERLAGE also acts at the olfactory level by improving the persistence of aromas and increasing their complexity. Depending on the wine treated, it can result in improved cleanness and aromatic openness at the end of frothing.
ALEAFIN PERLAGE contains insoluble fractions that require several days to be fully effective. Used in the doses indicated, it does not result in significant deterioration of filtration performance.
Plant polysaccharides and derivatives of yeast Saccharomyces cerevisiae rich in mannoproteins.
ALEAFIN PERLAGE is suitable for all categories of sparkling and semi-sparkling wines where:
– Greater fineness of the bubbles
– Greater retention of the froth crown
– Greater creaminess of the froth at tasting
The use before frothing allows to significantly improve the result especially on the reduction of the size of the bubbles constituting the perlage.
However, use at the end of refermentation is possible and is effective by allowing the product a contact time of at least 5-7 days before filtration.
Dissolve ALEAFIN PERLAGE in 20 parts water or wine and add to the mass, homogenizing carefully.
