ASCORBICACID is a preservative that, when added to wine, oxidizes by consuming dissolved oxygen; thus it protects wine by preventing oxidation of aromatic compounds (preserving fruity aroma) and polyphenolic compounds.
ASCORBIC ACID prevents Fe(II) to Fe(III) oxidation, reasoning that it prevents blue cloudiness (blue cases), although because of its legal limit it assumes very limited treatment.
Dissolve theASCORBIC ACID in water, at a ratio of 1:10, stirring until any lumps have completely disappeared, then add to the mass being reassembled and homogenize properly.
