Aleasol 61
LIQUID
Add in varying doses as needed.
Indicatively, on musts, 6 to 20 mL/hL, depending on the phytosanitary state of the grapes.
10 mL/hL of ALEASOL 61 provides approximately 60 mg/L of SO2 and 17 mg/L of APA
Current EU regulations – Reg. (EC) 606/2009 – require the use of ammonium bisulfite exclusively in fermentation in the maximum limit of 0.2 g/L, corresponding to about 20 mL/hL (= 28 g/hL) of ALEASOL 61.
Appearance: deep yellow clear solution with typical sulfur dioxide odor.
ALEASOL 61 is a liquid sulfiting agent also containing readily assimilable nitrogen in the form of ammonium NH4+.
Pure aqueous solution of 61% P/V Ammonium Bisulfite in SO2.
ALEASOL 61 is a liquid sulfiting agent that allows both sulfur dioxide and nitrogen in ammoniacal form to be added to musts at the same time.
Adequate APA (Readily Assimilable Nitrogen) content is essential for proper fermentation to take place, and ammoniacal nitrogen is the form of this element most easily assimilated by yeasts. At the same time, a proper supply of sulfur dioxide is necessary to conduct controlled winemaking.
Consequently,ALEASOL 61 is the ideal sulfite for the fermentation phase.
