Botrytized musts in late fermentation or wines:

ALEAZYM BETA GL is a b-glucanasic enzyme in microgranulated form standardized with maltodextrin at a minimum activity of 12000 B GLU/g.
Manufactured in accordance with current legislation.
ALEAZYM BETA GL is an enzyme derived from classical and selected strains of Trichoderma harzianum.
ALEAZYM BETA GL has been formulated for the treatment of late-fermenting musts and wines, facilitates and enhances yeast cell lysis in the case of “élevage sur lies” and is particularly effective in improving filtration in the case of botrytized vintages.
It is characterized by significant b-1,3 b-1,6 glucanase activity (bdGLU, IUB 3.2.1.58), which promotes lysis of the yeast cell wall and consequent release of aromatic and structuring compounds in wines.
ALEAZYM BETA GL is extremely effective in the degradation of glucans, colloids produced by Botrytis cinerea that are highly cholmated in filtration.
ALEAZYM BETA GL is purified by cinnamyl esterase activity and free of anthocyanin activity.
ALEAZYM BETA GL is a highly active b-glucanase in maceration at the pH of the must (optimum between 3.0 and 4.0). It is added (after dilution in 5% water) into the must, taking care to thoroughly homogenize the mass to be treated.
