Higher dosages are recommended in wines with high tannin content.

ALEAZYM LYSO is an enzyme preparation based on endo-glycosidase extracted from hen’s egg white, suitable for the proper microbiological management of musts and wines.
As the enzyme is a protein, it is advisable to consider any protein supply resulting from treatment for protein stability purposes.
ALEAZYM LYSO contains potentially allergenic products.
Lysozyme powder
ALEAZYME LYSO is indicated for:
– use in products in which the SO2 content is to be reduced;
– preventing spontaneous malolactic fermentation by indigenous bacteria in the mass;
– reducing the antagonistic action of bacteria against yeasts, consequently promoting the smooth course of alcoholic fermentation.
Dissolve in mineral water at a ratio of 1:10, then add into the mass to be treated, taking care to homogenize the product well. DO NOT use at the same time as bentonite.
