Aleastab FUM-OH is a stabilizer based on Fumaric Acid, an organic acid that being part of major cellular metabolic processes is already naturally present in must and wine.
When added to wine, it makes it possible to prevent the onset of malo-lactic fermentation and in some cases to stop it. Therefore, its use is useful for all those wines in which MLF is undesirable such as sparkling wine bases, sweet and passito wines, and wines with poor or insufficient acid structure. Its rational use also makes it possible to reduce the doses of SO2.
Dissolve Aleastab FUM-OH directly in wine in a ratio of 1:20 or greater, stirring until the crystals are completely dissolved and any lumps have disappeared, then add to the mass being pumped over and homogenize appropriately.
N.B. Fumaric acid is poorly soluble in water (solubility inH2O< 10 g/L at 20°C).
