Polyvinylimidazole (PVI) / Polyvinypyrrolidone (PVP)

General characteristics

Appearance: White powder.

PVI/PVP is a copolymer authorised by the EU for the treatment of musts and wines, for the purpose of reducing metals such as iron, copper and aluminium.

Applications

Alestab DE-MET It allows to reduce the oxidative evolution and the browning of musts and wines, acting on the content of heavy metals, which play a decisive role as catalysts of the enzymatic and chemical reactions of oxidation.

Its use helps reduce the risks of breakage linked to the excessive presence of heavy metals and pinking on wines considered at risk, while preserving the varietal aromatic components.

Recommended Dosages
  • On must, as a preventive treatment, from 10 to 30 g/hl.

  • On wine, as a curative treatment, from 10 to 50 g/hl

It is advisable to carry out preventive laboratory tests to identify the appropriate dosage for the product to be treated.

Maximum dose permitted by law 50 g/hL

Instructions for Use

Disperse in water (ratio 1:20).

After rehydration and stirring, add and homogenize in the mass to be treated, during reassembly. Keep the mass stirred as much as possible.

Alestab DE-MET It starts to act already 2 hours after the beginning of the treatment. The agitation of the mass to be treated favors the contact product/wine increasing the effectiveness of the product.

The product must be removed after a maximum of 48 hours from the start of treatment, as per current Community legislation, through appropriate filtration.

The treatment must be carried out under the responsibility of an oenologist and must be recorded in the cellar register.
