Il NEUTRAL POTASSIUM TARTRATE It is used as an acidity regulator, which leads to a re-balancing through a shift in potassium ions, and consequently to the formation of potassium acid tartrate which is poorly soluble in hydroalcoholic solutions, but varies directly through temperature management.
Il NEUTRAL POTASSIUM TARTRATE It also plays an important role in the tartaric stability of a wine, since the simultaneous addition of potassium acid tartrate during refrigeration leads to a greater formation of crystallized nuclei. It does not greatly alter the composition and organoleptic characteristics of the wine and is used as a late intervention thanks to the rapid development of potassium ions in the mass.
It is necessary to conduct microvinifications to determine the most suitable dose, as it cannot be deduced through a stoichiometric calculation.

The doses vary from 150 gr/hL to 350 gr/hL depending on the case.
IMPORTANT: the deacidification of wines in authorised wine-growing areas can only be carried out within a maximum limit of 1 g/L expressed tartaric acid
