THEASCORBIC ACID It is a preservative that, when added to wine, oxidizes by consuming dissolved oxygen; in this way it protects the wine by avoiding the oxidation of aromatic compounds (preserving the fruity aroma) and polyphenolic compounds.
THEASCORBIC ACID It prevents the oxidation of Fe(II) to Fe(III), which is why it avoids the blue cloudiness (blue boxes), even if its legal limit requires very limited treatment.
From 10 to 100 g/hl, depending on the treatment to be carried out.
250 g/hl of ASCORBIC ACID represents the maximum limit permitted in the EC.
Dissolve theASCORBIC ACID in water, in a ratio of 1:10, mixing until any lumps have completely disappeared, then add to the mass being reassembled and mix thoroughly.
