Liquid preparation based on condensed and ellagic tannins extracted from different woody matrices in liquid phase stabilized with SO2 and vegetable polysaccharides (E404).
Aleatan VINTAGE FR1 it is a specific tool for the enhancement of fruity aromas and for the stabilization of color in red winemaking.
The reactivity of this specific mix of tannins with the aromatic component of red wines allows to enhance the varietal fruity notes making them more stable and intense and to increase the aromas of fresh red fruit such as cherry, morello cherry and raspberry.
The aromatic precursors naturally present in tannin are released during alcoholic fermentation with an effect that is even more intense if the fermentation is carried out by yeasts capable of developing these aromatic characteristics, in particular Aleaferm 0-12 o Aleafer Flavour.
Aleatan VINTAGE FR1 It is rich in highly reactive catechin and profisenitin tannins, capable of stabilizing anthocyanins by direct condensation via an ethanal bridge.
Stabilization of red color and promotion of intense fruity aromas in red and rosé winemaking.
Red wines 10 – 30 g/100 kg pressed
· Traditional maceration: the entire dose at the end of filling the winemaker
· Prolonged maceration: fractional dosage
· Very short maceration (sweet racking): the entire dose at racking
New wines 10 – 20 g/100 kg grapes: directly when filling the winemaker
Rosé wines 5 – 10 g/hL: with alcoholic fermentation started.
Dissolve in a small quantity of water or must and add to the mass to be treated, homogenizing carefully.
