Liquid solution based on ellagic tannin extracted from chestnut wood (Castanea sativa)
stabilized at source with SO2.
Aleatan VINTAGE CST is a liquid tannin that is very active in stabilizing the
color of red wines thanks to a complex of functional activities:
➢ Antioxidant: in the early stages of maceration when the essential oils are not yet extracted
natural tannins from grapes, helps protect the anthocyanins already extracted
from direct oxidation;
➢ Antioxidant: in the case of grapes affected by Botrytis it allows to inactivate the enzymes
laccase (polyphenoloxidase) produced by the fungus;
➢ Pro-oxidant → during racking or on young wines it allows to block oxygen,
triggering the redox mechanism that leads to the formation of the ethanal bridge in
presence of alcohol and condensed tannins.
Color stabilization in red winemaking.
In the pre-fermentation phase, starting from the pressing, to the filling of the winemaker, to the
racking. Ideal for thermovinification and red wines from sulphite maceration.
Red wines start of maceration 10 – 30 g/100 kg pressed
Red wines racking: 5 – 15 g/hL
Botrytized red grapes: 20-50 g/100 kg crushed
Thermovinified and desulphurized: 5-30 g/hL
Dissolve in a small amount of water or must and add to the mass to be treated
homogenizing carefully.
