[xxxx] clarifies and stabilizes the wine. The extraction technique applied allows to obtain a composition very similar to that of the polyphenols extracted from the wine during fermentation in the presence of unroasted chips. [xxxx] regulates the oxidation-reduction potential of the wine, prevents the formation of reduced odors, promotes the structure of the wine.
[xxxx] It can be used:
· during alcoholic fermentation
· on young wine
Fractional additions are possible to improve the wine's structure and color quality.
· From 10 to 20 g/hl during fermentation to stabilize the color, improve the phenolic potential and enhance the aromatic qualities of the wine.
· From 10 to 20 g/hl on young wine to stabilize the color and structure of the wine and balance the redox potential.
