Aleastab FUM-OH It is a stabilizer based on Fumaric Acid, an organic acid that, being part of the main cellular metabolic processes, is already naturally present in must and wine.
Added to wine it helps prevent the onset of malolactic fermentation and in some cases to stop it. Therefore, its use is useful for all those wines in which MLF is undesirable such as sparkling wine bases, sweet and straw wines, wines with poor or insufficient acid structure. Its rational use also allows to reduce the doses of SO2.
30 or 60 g/hL to prevent or block an already started MLF, depending on the characteristics of the wine and the microbial pollution.
To melt Aleastab FUM-OH directly into wine in a ratio of 1:20 or greater, mixing until the crystals have completely dissolved and any lumps have completely disappeared, then add to the mass being reassembled and mix thoroughly.
NB Fumaric acid is poorly soluble in water (solubility in H2O < 10 g/L at 20°C).
