Aleaferm SUPER-TH
Dry active yeast Saccaromyces cerevisiae ex. Rf Bayanus.
Contains sorbitan monostearate E491.
Appearance: light brown sticks, with typical odor.
Aleaferm SUPER-TH It is a cryo-tolerant yeast, with good resistance to alcohol. It has excellent fermentation kinetics with a rapid onset; its carboxybetaliase activity allows optimal synthesis of thiol aromas, improving the primary and varietal aromatic profile typical of the grape variety. It has a low production of volatile acidity, volatile phenols and sulfur compounds.
ALEAFERM SUPER-TH It is a yeast suitable for wines in which you want to enhance the thiol characteristics, in particular citrus and fruity notes.
In white wines it enhances the aromatic complexity and varietal typicality, contributing at the same time to an increase in volume and elegance on a gustatory level.
15-25 g/hL for must fermentation, depending on the level of contamination by indigenous yeast.
