ALEAFERM PDM it is a yeast particularly suitable for bottled foaming, according to the Classic Method. Its high tolerance to alcohol also makes it suitable for the production of wines with a high alcohol content. Poor foam producer, it has a limited flocculation capacity.

Applications

ALEAFERM PDM It is a yeast suitable for the production of quality sparkling wines, in which fermentation safety, good structure and adequate and persistent perlage are sought. It enhances the aromatic complexity, providing secondary aromas (bread crust) also helping to enhance the aromatic peculiarities of the starting product.

Recommended Dosages

15-25 g/hl on musts. In case of contaminated musts it is possible to increase the doses of use.
