ALEAFERM CHM It is a yeast particularly suitable for refermentations, arrested fermentations and second fermentation. Its high tolerance to alcohol also makes it suitable for the production of wines with a high alcohol content. Poor foam producer, it has a limited flocculation capacity.

Applications

ALEAFERM CHM It is a yeast suitable for the production of sparkling and sparkling wines, in which fermentation safety and organoleptic balance are sought. It enhances aromatic complexity, providing fresh and floral fermentation aromas, also helping to enhance the aromatic peculiarities of the starting product.

Also indicated for stuck fermentations.

Recommended Dosages

15-25 g/hl on musts. In case of contaminated musts it is possible to increase the doses of use.
