ALEAFERM CxU RED It is characterized by a very regular fermentation kinetics, moderately influenced by low temperature, particularly low volatile acidity, low SO2 production with a high free/total ratio, minimal acetaldehyde, medium residual malic. It is also characterized by the ability to extract total flavonoids, both as tannins and anthocyanins, allowing a high and stable color intensity.

Applications

ALEAFERM CxU RED It therefore has all the characteristics to enhance the entire heritage of complementary substances during fermentation which will evolve during refinement until creating great reds, ideal for the vinification of red wines without the addition of sulphites and where colour stability is sought.

Recommended Dosages

15-25 g/hl on musts. In case of contaminated musts it is possible to increase the doses of use.
