ALEAFERM CxU WHITE It is a cryo-tolerant yeast, with high resistance to alcohol. It has excellent fermentation kinetics with a rapid start of fermentation; if properly nourished, it is able to ferment even difficult musts, enhancing the varietal characteristics of the vine. Low production of volatile acidity and low production of acetaldehyde and sulfur compounds.

Pof(-) character: does not produce vinyl-phenols, marked enzymatic – glucosidase activity.

Applications

ALEAFERM CxU WHITE It is a yeast suitable for wines in which you want to enhance the aromatic peculiarities, the varietal and floral notes. In white wines it enhances the finesse and aromatic complexity, also contributing to the gustatory balance, ideal for producing white and rosé wines without adding sulphites.

Recommended Dosages

15-25 g/hl on musts. In case of contaminated musts it is possible to increase the doses of use.
