ALEAFERM CRYO is a yeast specifically recommended for fermentations at low temperatures (< 15°C), with a high capacity for enhancing the aromatic characteristics of grapes and musts. Its nutritional needs increase at very low temperatures and, if adequately nourished, it enhances the varietal characteristics of the vine, developing fruity or floral aromas, depending on the starting base. Low production of volatile acidity and low production of volatile phenols and sulfur compounds.
ALEAFERM CRYO It is a yeast suitable for all wines in which you want to enhance the aromatic peculiarities, fruity and floral notes. In white wines it enhances the elegance and aromatic complexity, also contributing to the taste balance; in reds and rosés it enhances the fruity notes and contributes to the stabilization of the color. Ideal for young and ready-to-drink wines, but also for wines with a complex aromatic profile and medium structure.
15-25 g/hl on musts. In case of contaminated musts it is possible to increase the doses of use.
