Micro-granulated gum arabic with dextrorotatory rotation power, from Acacia seyal.
Appearance: White/light yellow microgranules.
It is an innovative instant-dissolving and filterable granular gum arabic, extracted from
wattle wattle.
The production technique of ALEAGUM SPARK, together with a careful selection of raw materials, it allows to obtain a clear product, free from impurities, whose very low clogging effect on the membranes does not affect the protective and stabilizing capacities of the wines against colloidal precipitations.
Specifically studied and selected to improve the characteristics of finesse and persistence of the perlage of sparkling and semi-sparkling wines.
It can be used during the secondary fermentation in an autoclave of previously micro-filtered or tangentialized wines, where it manages to give the best performances in improving the perlage.
Alternatively or as a complement, it can be used on sparkling wines in the pre-bottling finishing phase.
· 20- 50 g/hL before secondary fermentation.
· 10-20 g/hL in the pre-bottling phase after the second fermentation.
The dose of use cannot exceed 0,8 g/L for red fortified wines and 0,3 g/L for other wines.
Used before the secondary fermentation in the autoclave on the already clarified and filtered base, it allows to improve the finesse and persistence of the beadwork.
ALEAGUM SPARK it can also be used at the end of the foaming process during the pre-bottling phase.
