Appearance: White granular powder with characteristic odor

ALEAZYM LYSO is an enzymatic preparation based on endo-glycosidase extracted from hen's egg white, indicated for the correct microbiological management of musts and wines.

Since the enzyme is a protein, it is advisable to consider any protein intake resulting from a treatment for the purposes of protein stability.

ALEAZYM LYSO contains potentially allergenic products.

Applications

ALEAZYME LYSO is indicated for:

• use in products in which it is desired to reduce the SO2 content;

• prevent spontaneous malolactic fermentation by means of indigenous bacteria present in the mass;

• reduce the antagonistic action of bacteria on yeasts, consequently promoting the regular progress of alcoholic fermentation.

Recommended Dosages

• 15-25 g/hl on musts

• 20-40 g/hl on wines

Maximum dose allowed in the EC 50 g/hl

In wines with a high tannin content, higher dosages are recommended.

Instructions for Use

Dissolve in mineral water in a ratio of 1:10, then add to the mass to be treated, taking care to homogenize the product well. DO NOT use at the same time as bentonite.
