Complex adjuvant for clarification based on pea and potato vegetable proteins activated with chitin derivatives.
Appearance: homogeneous beige powder.
ALEA VEGETABLE it's a clarifying agent ALLERGEN FREE based on vegetable proteins, obtained from non-genetically modified peas and potatoes.
In fermenting musts, treatment with ALEA VEGETABLE It assists the flotation and sedimentation processes, ensuring fast and compact deposits. The synergic action of the different vegetal proteins is particularly reactive towards phenolic substances, improving both the appearance of the treated product and its organoleptic profile.
The use of ALEA VEGETABLE in association with silica gel and/or bentonite, allows a clarifying action on the oxidized fractions, without interfering with the colour intensity of the wine, while reducing the risks of over-coldness resulting from clarification with traditional methods.
From 10 to 40 g/hl in musts and refermentation.
From 5 to 30 g/hl on wines
To disperse ALEA VEGETABLE in water, in a 1:15 ratio, shaking well to avoid lumps forming, then add to the mixture, taking care to mix thoroughly.
